Nutrient Bomb Breakfast Cookies
Ingredients:
1 cup rolled oats
1/2 cup oat flour
1/2 cup dried cranberries
1/2 cup pumpkin seeds
1/4 cup ground flaxseeds
1 Tbsp. chia seeds
1tsp. ground cinnamon
1/2 tsp. Baking powder
1/4 tsp. Salt
2 bananas, mashed
2 Tbsp. pure maple syrup
2 Tbsp. unsweetened almond milk or any plant based milk
Instructions:
1. Preheat oven to 325 degrees and line a baking sheet with parchment paper.
2. Mix all dry ingredients in a large bowl.
3. Stir in the wet ingredients until combined. Set aside for a few minutes, or until the batter has thickened slightly.
4. Wet your hands or use gloves and form the batter into eight balls. Place at least 1 inch apart on the prepared pan. Flatted the balls with your hands until they are about 1/12 inch thick.
5. Bake for 18 to 20 minutes, or until a toothpick inserted into a cookie comes out clean.
Antioxidant Overnight Oats Cups

1/2 cup fresh mixed berries
2 tsp. Chia seeds
1 tsp pure maple syrup (add more if you want it sweeter)
1/2 tsp. Pure vanilla extract

Simply combine all the ingredients in a bowl, and refrigerate in a jar or sealable container overnight to thicken.
PB & Jelly Overnight Oats Cups

2 tsp. natural peanut butter

I have been trying to go vegan. I haven’t because all the food is disgusting. I did not expect this burger to look like this. Especially when you said seaweed I might try this.
It has gotten easier now that there are more vegan options but seasoning everything is key in my opinion.
I'm not fully vegan but, I do like adding some options to my meals. This was a great way to use heart of palm with the seaweed. How often do you make this? It looks like a meticulous process.

I’ve made a few variations of a vegan fish sandwich but never like this. I will have to try it this way. I also never thought to make my own nori. I normally just buy the seasoning.
I’ve also used banana blossoms for a fish fry. The blossoms take on whatever seasonings you put on and it resembles a long piece of “fish” fillet 😊

I've never seen heart of palms be used like this usually noodles. This is so different and cool.it really looks like fish!
I haven’t tasted fish in 20 plus years but my hubby said it really gave him that fish taste & smell. A can of hearts of palm was like $2 so it was good & cost effective 😊

I went vegan back in 2017 for 3 months, and it was a great decision. I love cooking but not vegan cooking. Meaning, the time it takes which is hard with my schedule. If I can find a vegan meal prep company, I would go fully vegan. And by your husbands face, that was a good sandwich!!!
Yup, it takes some time. I prepare most of my meals on Sundays unless I’m frying something. There are some vegan meal prep companies that deliver. My hubby had a second sandwich 😋
