My second son bought this Almond Joy in the US. I ate it for the first time. The coconut reminded me of a tropical country. I wondered if it would be possible to reproduce this type of candy, which is not seen in Japan, in cookies, so I gave it a try. It turned out well.
*Recipe* (10 cookies, 7.5 cm in diameter)
Ingredients
55 g almonds
65 g unsalted butter
20 g granulated sugar
25 g Sanonto ( soft brown sugar )
30g beaten egg
A few drops of vanilla oil
80 g cake flour
1.5 g baking soda
Pinch of salt
25 g coconut fine
90 g chocolate chips
How to make
1.Coarsely chop 55 g almonds (roasted in a preheated oven at 150°C for 10 minutes).
2.Softly knead 65g unsalted butter that has been brought to room temperature.
3.Add 20 g granulated sugar and 25 g sanonto and mix until white and fluffy.
4.Add 30g beaten eggs and mix.
5.Add a few drops of vanilla oil and mix.
6.Sift in 80g cake flour and 1.5g baking soda and fold.
7.Add a pinch of salt, 25g coconut flour and the almonds from (1) and mix.
8.Add 90g chocolate chips and mix.
9.Roll the dough into a ball about 37g and flatten it. Make 10 balls and arrange on an oven sheet.
10.Bake in a preheated oven at 180℃ for 15 minutes.
11.Done. Maybe I'll make some coffee.
アーモンドジョイなるキャンディバーが、次男がアメリカから買ってきてくれたお菓子にありまして。人生初のアーモンドジョイ。食べてみると、丸ごとアーモンドが甘い何かと混ぜられたココナッツファインの上にどんとのっていて、チョココーティングされたお菓子でした。甘くて、アーモンドの歯応えがいい。最後に口に残るココナッツが南国を連想させます。アーモンドジョイというよりココナッツジョイな感じのお味です。日本では見かけないタイプのお菓子。クッキーで再現したらどうだろうとやってみました。おいしくできました。
*レシピ*（直径 7.5cm 10枚）
：材料：
アーモンド 55g
無塩バター 65g
グラニュー糖 20g
三温糖 25g
溶き卵 30g
バニラオイル 数滴
薄力粉 80g
重曹 1.5g
塩ひとつまみ
ココナッツファイン 25g
チョコレートチップ 90g
：作り方：
１．アーモンド（150℃に予熱したオーブンで10分ローストしました）55gを粗く刻む。
２．室温にした無塩バター 65gを柔らかく練る。
３．グラニュー糖 20g、三温糖 25gを入れ白っぽくふんわりするまで混ぜる。
４．溶き卵 30gを入れ混ぜる。
５．バニラオイル 数滴入れ混ぜる。
６．薄力粉 80g、重曹 1.5gをふるい入れさっくり混ぜる。
７．塩ひとつまみ、ココナッツファイン 25gと（1）のアーモンドを入れ混ぜる。
８．チョコレートチップ 90gを入れ混ぜる。
９．生地をひとつ 37g程度に丸め平らにする。10個作ってオーブンシートに並べる。
１０．180℃に予熱したオーブンで15分焼く。
１１．でけた。コーヒーでも淹れるかな。
