Matthew Biancaniello is a renowned cocktail chef that started his career at the Hollywood Roosevelt Hotel in 2008. His passion for elevating the bar experience led him to fusing artisanal spirits with seasonal farm-to-table produce and foods. Word quickly spread about these distinct and exotic cocktails that were blurring the lines of conventional thinking. Using a culinary lens and sourced ingredients only from local farmers markets and wild-foraging the Santa Monica Mountains, Matthew was dreaming up truly unique beverage creations that his guests had never imagined.
Within a couple years, Matthew was consulting and designing cocktail menus for new fine dining restaurants and bars. Enlisted by television producer, Adam Briles, he traveled around the world as the host of the TV series, Good Spirits, on A&E. His mission was to immerse in local ingredients and culture - in order to create the ultimate globally-influenced cocktail menu. In 2016, he published his first book, Eat Your Drink (available on Amazon) which made some of his most iconic recipes available to the public. In 2018, he opened his dream concept - a 12-seat “liquid omakase” experience restaurant in Malibu, California, called Mon-Li. It featured an 18 course liquid tasting menu that was the hottest ticket on the L.A. foodie scene. Tragically, one month after opening, Mon-Li was destroyed in the Woosley Fire.

      There really is not a protocol for the ratio. In France, it is just personal preference. Generally served neat with a small pitcher of water on the side so one can mix it to their personal preference. If 1 to 4 is what you like, then that's great.

    Being in the cannabis industry, PLEASE do not confuse hemp with marijuana. The product you are testing is hemp derived delta 9 thc. major difference. Non legal states can not sell marijuana.     Damn, 4 part pastis? Must taste good, I think traditionally Pastis as an aperitif is only 1 part pastis to 5 or five parts water. The ice should come AFTER the water, which comes in AFTER the pastis. The order is important to get the most flavor, if the pastis is chilled before you add the water (like by pouring it over an ice cube) it will release a soapy unpleasant after taste.

    I live in Algeria, and Pastis is readily available here although it's not thought of well, since it's by far the cheapest alcohol compared to its alcohol content; so it's known as the drink of the 'poor alcoholic'. I personally love it. In my country, it's known as 'The shitter of men' lmao, because it's so strong that it makes you shit yourself. I believe in France it's purely an aperitif however, not a digestive

    25mg is a ton of thc for those without high tolerance. As someone that doesn’t get high like that but open to unwinding without alcohol, a 2.5mg dose would allow most people to enjoy two drinks while getting an anxiety relieving buzz. But 25mg in a single glass is 5 doses of thc and would have some people unable to function.

      This one is OK if it does come out chunky but usually it doesn’t it’s a lot more meal like you can choose to find strain it, but I think it takes away some of the sickness that I think it’s important that the foam balances out

    This looks great! I make liqueurs at home, but rarely ever use wine. How is the shelf life on this type of thing? I assume you accept the oxidization of the wine as a feature - with consideration of the 40 day steeping period?

      Hey Tyler, with recipes like this, especially infusions, always try them in a small quantity first. You are totally right to not commit to a 4 liter batch of something you haven't even tried yet! On camera, Matthew is usually making his infusions for pop-ups, large parties, events, etc. but always gives scalable quantities. For instance, for most infusions, fill ANY size container 3/4 full with the ingredient(s), top with spirit, let sit for 7-10 days. The Pamplemousse has more ingredients but is still totally scalable. You should be able to dial down a test batch for about $10--15. Let us know how it comes out and thanks for watching!

      @@liquidjourneys9760 I make oleosaccharin from grapefruit zest and sugar. It's very concentrated and can be added as a syrup to cocktails or mixed with neutral spirits to make a liquor which can be topped with seltzer, prosecco, or Moscato to make a spritz. I think you should do a video on oleosaccharins since they may be a cheaper alternative that can be prepared a day or two in advanced vs a month. I will try this method to compare.

      An oleo-saccharum with grapefruit peel sounds amazing. I love that idea! We just may take you up on doing a video on those. However, they are not really a level comparison to this Pamplemousse. An oleo saccharum is a fantastic and flavor-potent ingredient for cocktails - and the Pamplemousse IS a cocktail on it's own. My favorite way to serve is chilled & neat in small 2 oz. glasses - especially at the end of a big dinner party. Just break out a chilled bottle and pass it around the table. Always a big hit. Have fun with it!

    I feel like I need an explanation for the sea urchin skeletons in a little saucepan 😆 This video reminds me of those Spy books where you have to find specific things in a cluttered photo. This recipe looks incredible. The initial steps remind me of sangria. Do you know the approximate resulting ABV? And does the jar need to be sanitized like with other fermenting projects? Or is just regularly cleaned okay?

      The sea urchin skeletons are part of the decor for my at home restaurant. You can just clean the jar and the alcohol percentage is around 25%. Thanks for watching and let me know how it turns out.

      We are not sure what the ABV ends up exactly. As a general rule, the (to be discarded) fruit always absorbs some of the alcohol (while displacing the juice and oils) during the steeping process - and that's why the fruit is not good to eat afterwards. So almost all infusions end up a slightly lower ABV once matured and ready for use. Also, we recommend always cleaning infusion vessels (and all parts) with a good antibacterial dish soap prior to use.

      @@matthewbiancaniello2438 To be honest it's been so long since we did this, I don't remember that well. It was definitely a bit unusual, but I think the most notable difference for people was the oddly translucent egg white. Otherwise I recall it being close enough to familiar to be perfectly enjoyable. We served it with crackers and a spoon! I think the emu egg's color makes for an even nicer presentation though.
