Reg Bouvette is a legend when it comes to Metis music. He has been gone for some years. I used to work for the record company that had many such fiddlers. Cliff Maytwayashing and Clint Dutiaume were great fiddlers as well. Those fellows I had the pleasure of working with.

Hmmm...you know, I never really considered that over there. These were just hanging from the ceiling until they were put on a counter to be cut and served. And then they sat there until finished. They are preserved by salt and air and that process can last a few years. I don't know how long they can remain in a shop or café. I can say from my experience that I never had tummy trouble from it. I need a Spainyard to offer some advice here for us 😊

@@silentcentury i can’t remember specifically which exactly, but I think it’s Japanese? They have a tea ceremony and when they’re making tea, the first cup is given to a little figurine that’s an animal, called a tea pet! Look them up! There are some cute tea pets.
