Harissa Grilled Lamb Chops with Mint Chimichurri | Must Try Summer Recipe!
This is one of my favorite dishes from my CookBook!! If you are on the fence about lamb… trust me you need to try it!
Lamb Chops:
• 1 Rack of lamb, cut into chops
• 1 10 oz jar of @mina Harissa
• 1 tsp Cumin
• 1/2 tsp salt
• 1/2 tsp pepper
• 2 tbsp red wine vinegar
• 1/4 cup olive oil
Mint Chimichurri:
• 1/2 cup Fresh Parsley, chopped
• 1/2 cup Fresh Cilantro, chopped
• 1/2 cup Fresh Mint, chopped
• 3 cloves of garlic, minced
• 1 tsp Crushed Red Chili Flakes
• juice from 1/2 a lemon
• 2 tbsp red wine vinegar
• 1/2 cup olive oil
1. Start by mixing all of the marinade ingredients into a large container with a lid, then place the sliced rack of lamb in and make sure everything is coated well! I usually add the vinegar and oil right at the moment before marinading. Pop the lid on and place them in the fridge for atleast 30 minutes.
2. To make the Chimichurri, prep all the herbs and ingredients and combine everything except the olive oil into a bowl. Mix and make sure everything is disbursed evenly, then add in the olive oil until you reach the desired consistency! Cover and set aside to develop.
3. Preheat your grill to High heat, and grab the lamb chops out of the fridge. Remove them from the marinade, but don’t wipe it off! When the grill is up to temp, let’s cook these for 4-5 minutes total, flipping 2-3 times. Check the temp and pull when they hit about 129°F if you want medium rare.
4. Let the lamb rest for 5-7 minutes, then serve with a drizzle of the mint chimichurri!

    At a CT native, I have tried New York, Chicago and New Haven Pizza. I love New Haven Pizza thr most. But that doesnt mean the others are bad!

    Im going to try this with a carne asada marinade 😋 and just sear it on the propane grill after, i dont have a fancy torch 😔

    This recipe has become one of my go to flank steak cooks every year since first trying it last year!! Give this a shot!! Marinade ingredients ¾ cup olive oil extra virgin ½ cup soy sauce 2 tbsp red wine vinegar 1 medium lime juiced ¼ cup brown sugar 2 tbsp dijon mustard 1.5 tbsp garlic powder ½ tsp black pepper ground Combine all the ingredients for the marinade together and whisk! Then you can add the flank steak, i prefer using a container big enough to lay the steak flat and submerge it. Avoid adding extra salt at this stage unless you use low sodium soy sauce, then you can add 1tbsp of salt to the mix. Let the steak marinate for 30-60 minutes. Then take it out, wipe off the exceas marinade, and get it on the smoker at 225F Let it cook hntil the internal hits 125, then sear however you prefer! I used a torch to avoid overcooking and get a controlled sear!     *Recipe Here* Also, the video cuts off because CZcams still doesn’t allow over 1 min! 😕 Have you ever thought of making baklava in the smoker?! This was the most unique baklava I’ve ever had! We have had a massive heat wave here in Ohio… and thankfully I was able to try out this experiment without spending hours outside using my @geprofile Indoor Smoker! This thing was a life saver!! Ingredients: * 1.5 cups pistachios * 3/4 cup water * 3/4 cup sugar * 3/4 cup honey * 1 orange peel * 1 cinnamon stick * 1.5 tsp ground cinnamon * 1 package of Phyllo dough, I used about half. * 1 - 1.5 cups melted Ghee 1. Preheat the smoker to 200°F and getting the pistachios onto a baking sheet. Place them in the smoker for an hour. 2. Place a sauce pan over medium heat and add the water, sugar, honey, orange peel, and cinnamon stick and stir. Bring to a simmer and reduce the heat to low and continue to stir and simmer for 10 minutes. Remove from the heat and let cool completely. 3. When the nuts are done, let them cool before transferring to a blender along with the ground cinnamon and blending until you have a chopped nut mixture. 4. Grab a small sheet pan and brush the entire inside with melted Ghee. Then cut the Phylloh dough to fit the pan, and place one sheet down into the sheet tray, brush more ghee on top of the dough. Place another sheet down and brush with ghee and repeat until you have 7 layers. 5. place down 1/3 of the nut mixture onto the dough and spread it out. Then place another sheet of dough on top, brush with ghee, and repeat until you have 5 layers. Then Place down another 1/3 of the nut mixture. 6. Repeat using 5 sheets of dough between the nut mixture layers, and the final top layer should have 6-8 layers of dough. 7. Preheat the smoker to 300°F and cut the baklava into triangles. Then place the tray into the Smoker and let it cook for 60 minutes! 8. Remove the baklava from the smoker, and immediately pour the syrup mixture over the top and getting into all the cracks!     I’m team garlic in my pizza sauce all day! What’s your preference?! Ingredients: • 1 can of @centofinefoods San Marzano tomatoes, peeled • 3 cloves of garlic, minced • 1 tsp dried oregano • 1 tsp salt • 1/2 tsp black pepper • 2 tbsp olive oil Open the can of tomatoes and if you’re using whole peeled tomatoes, crush them by hand into a bowl. Make sure to rub your hands through it until it’s at your preferred consistency. Then you can add the minced garlic, dried oregano, salt, pepper, and olive oil and mix until everything is spread evenly throughout.     You need to Sautee that garlic in olive oil first. Then, after they are fragrant add everything else into the pot and stir it. Cooked garlic is the bomb in pizza sauce. Raw garlic will overpower everything else.

      @@DJChrisSee I never cook garlic for a pizza sauce, it cooks on the pizza. I’ve tested it many ways and this is always my preference. But everyone can do what they want!
