Hey Eric! It's a little tough to find a chart of flavour notes based on processing method. We have seem similar notes from washed and natural coffees depending on a multitude of factors, but generally speaking if the coffee has very intense fermentation notes, it is typically a natural or anaerobic/experimental process. Different origins have different profiles, and depending on process, varietal, and sometimes sub-regions, the flavour notes can vary widely! The Coffee Atlas may be the best resource for something like this, or perhaps Sweet Marias.
