Yes, they serve Ice Cream. The buffet restaurant for Water Villa and Beach Villa is different, So your All inclusive would be applicable only in these restaurants which too depend upon your room selection. For Water Villa it's SouthernStar. Then you can't have it in Beach Villa restaurant. Anyways both restaurants will serve the same menu. The rest of the restaurants are paid. Rest you can mail them your queries they will get back with latest updates. Might be my details will be outdated.

Not sure whether they serve coconut as part of drinks but the price for coconut water is 7$.

On your last night at the resort do check once with your resort reception desk and inform them about your flight timings, So they will arrange transportation to the Domestic airport accordingly. Report on their specified time, If you miss your jetty then It will take another hour for the next ride. It's always the best idea to reach early at the international airport as you do not need to worry about long immigration and security check queues and you will get enough time to shop from duty-free shops. Near the hotel reception, you will find one dedicated desk personal only for water activities. They will explain the packages in a detailed manner. And no need to book these activities in advance. According to the weather, you can book suitable activities because if the day is pretty tidy then they won't allow you to do any activity.
